Why did many Europeans settle in US and Canada but not in Mexico?

Back then farming was the major activity. In Canada right up to about 1910, most people lived on farms. It was similar in the USA. Much of Mexico, Peru and Colombia is not good for farming. Some Europeans went there anyway but not like the USA or Canada. I suspect that the USA and Canada were more open to all European immigrates than the Latin countries.
